As you may know, terrible frosts in the region of Chablis last spring have dramatically lowered the amount of wine produced in 2021 – with some growers down 80%-90% from a normal crop! The result is that white Burgundy in general, and Chablis in particular, is getting scarce and more expensive as growers and importers raise prices to make up for the coming shortage.

If you love the crisp, racy, minerality of Chardonnay grown in this cool, northern Burgundy outpost like I do, this is a tough situation to ponder. Truly nowhere else in the world makes chardonnay quite like this! To help alleviate the problem we took as big a drop as we could get of Patrick Piuze’s Chablis Terroir de Fye 2020, a classic Chablis grown in a 2.5 hectare parcel near the Premier MOnt de Mileieu de Tonnerre, and just opposite the Grand Cru of Blanchots. creating a village level wine that drinks way above its price! So what makes Patrick’s wines so compelling? For starters, when he arrived on the scene in Burgundy he started working and learning his craft at some of the best addresses he could find – Leflaive, Jean-Marc Brocard and Jean-Marie Guffens to name a few, soaking up everything he could. He came from Montreal, and so was less constrained by tradition as he started his own domain in 2008, and he is not afraid to buck convention. One example is that while the vast majority of Chablis grapes are harvested by machine, Piuze hand harvests everything. He uses a vertical vs pneumatic press, something he learned for Jean-Marc Roulot. And then there is his near fanatical respect for the unique terriors of the region – not just the 1er and Grand Cr sites, but village level as well.

He now makes about ten different Village level “Lieu dits” from single parcels of grapes, each with their own unique signature, some of which he feels rise to the level of Premier Cru!
