This beautiful Chinon rosé from the Loire Valley region of Chinon is always one of my favorite wines every year! I consistently put it right up there with the heavy hitting classics – Clos Sainte Magdeleine from Cassis, Terrebrune in Bandol, and Vacheron in Sancerre to name a few – the difference is the price! It is 100% hand-harvested Cabernet Franc, 50% certified-organic estate fruit (from sandy, gravelly, flat parcels along the Vienne) and 50% from a neighbor who is in the process of converting to organic farming. Half of the fruit is pressed directly as whole clusters and the other half is saigné (bleeding of the pale juice of their red Chinon early in fermentation).Only native yeasts are used, fermentation is in stainless steel tanks.
The result is a salmon/pink colored rose with lovely hints of red fruits, savory earth hints, and floral top-notes. On the palate it is lively, focused, and refreshing – dry with lovely acidity, tension and a hint of tannin. Utterly food friendly and versatile, perfect all on its own or with salads, seafood, grilled vegetables, light meats, cheeses, charcuterie and so much more.
