And that might be the end of the story, a group of Nuns making a wine no one has ever heard of. But enter legendary winemaker Giampiero Bea of Paolo Bea fame (one of Italy’s greatest wineries), and we have a wine with incredible character and quality, and a huge geeky following in the US market. Bea got to know the Sisters and took an interest in the incredible vineyard they tended. He stepped in and began advising them, encouraging them to employ a longer than usual skin contact, fermenting juice with the skins, as well as extended lees contact, adding texture and tension to the wine without sacrificing freshness and focus at all.

The resulting wine has aromas redolent of tree fruits rather than orchard fruit – hawthorne, acacia, with top notes of white flowers. It is clean, mid weight, not rustic or oxidized at all, with good intensity and acidity underneath. It is medium plus in body, and is perfect with lobster, scallops, poultry, lighter pasta or risotto dishes, steamed clams or mussels, cured meats and grilled vegetables, and all on its own.
