Vineyard and Terroir: Average vine age is 15 years. Multiple parcels, exposition varies. Mix of clay and sandstone. Certified organic and farmed biodynamically. Grapes are hand harvested.
Fermentation: 20 days in temperature controlled tanks with indigenous yeast. Very low doses of SO2 are added and the wine is bottled in March without filtration. Aged in stainless steel tanks.
This amazing property was founded by Karina and Guillaume Lefèvre after they met hiking in Corsica. In 2004 they purchased the property using their savings and programs set up by the French Government to entice young people from leaving the countryside for the cities and encourage them to farm and preserve France’s rural countryside and tradition of small family farms. Today they biodynamically farm 29 hectares of traditional Provençal red and white varieties grown in a flaky limestone soil known as "Lauze" from which the winery takes its name, Domaine de Sulauze. The majority of their production is the beautiful Pompette rosé, but even so it sells out immediately!
