“Lumache” translates to snail and is a shell-shaped pasta that is great for tossing with heavier sauces or baking with lots of cheese. One pound of Lumache serves four people.  |  $16


Bucatini is a thick and tubular-shaped pasta native to the Lazio region of Italy. “Buco” translates to “hole” so the literal definition is “little holes” which represents the hollow aspect of the pasta. This pasta is traditionally served with Amatriciana sauce. Comes with one pound of Bucatini and serves four people.  |  $16

Our Gluten-Free pasta is available in either Lumache or Bucatini and made with a unique mix of cornflour, rice flour, bamboo fiber, and psyllium fiber! This mix creates a very strong, “gluten-like” network which keeps the pasta intact as it cooks in the water and is tossed in the sauce.  |  $24

Bessie’s Southern Style Mac n Cheese! An ode to Chef AJ’s grandmother who has prepared this dish on every holiday you can think of since his birth. In our version, it’s made with freshly extruded Lumache, Cheddar, Mozzarella, and 24 Month Aged Parmigiano-Reggiano! Sticking as close to the original recipe as possible with just the fresh pasta and Parmigiano-Reggiano being subbed in, this is a timeless dish and great for those of you with families!   |  $24

A combination of onions, shallots, and garlic is cooked for hours before it sees a single drop of tomatoes, once it does it endures another couple of hours of cooking on the lowest of heat to slowly develop a robust and homelike flavor profile. This sauce is finished with fresh hand-picked basil and extra virgin olive oil. Sauce is 16oz and serves two people. |  $14
